Blueberry Compote

Compote-ly Blue-tiful and fresh! Why waste your blueberries—make it into a delicious compote to go with pancakes, your favourite dessert, oatmeal, yoghurt, you name it.

It’s blueberry season! I find it hard to finish a whole box sometimes and my unfinished blueberries turn moldy overnight in the fridge! What a waste .

I’ve found the quickest and healthiest solution: Make the freshest tasting blueberry compote with any leftover berries— see below for the quick recipe!

Ingredients:

☐ 1 to 2 small boxes of blueberries

☐ 2 tablespoons of raw honey (prebiotics to boost immunity)

☐ 2 slices of lemon (supports immune system and skin)

☐ [optional] 1 tablespoon of dried or fresh basil (combats free radicals)

☐ [optional] 1-2 tablespoons of freshly grated or finely chopped ginger (increases digestion and metabolism)

Instructions:

  1. Cook washed blueberries in a saucepan (or a small pot) until its juices have come out.

  2. Add honey and lemon

  3. Continue smushing the blueberries with a ladle.

  4. Add optional ingredients.

  5. Cook until you reach your desired consistency.

Extra note: You can keep the compote in the fridge sealed for around 1-2 weeks, but it's usually gone in a few days and it's great as a gift to a friend/neighbour!
