Kalbi (Sauce) Steak on Purple Skies

This recipe is simple and hits the spot, especially if you want to veer a bit healthier on a “cheat day.”

Ingredients (for 2 servings)

☐ 2 pieces of korean bbq steak/tender cut of beef of your choosing

☐ 5-6 tablespoons Mirin

☐ 1 tablespoon Rice Vinegar

☐ 1 tablespoon of black pepper (adjust to your own preference)

☐ 2 Hawaiian purple yams

☐ ½ tablespoon butter (optional)

Instructions for Ube Mash:

  1. Chop the yams horizantally so there are ~3-4 pieces from each yam.

  2. Steam them for 20 minutes.

  3. After cooling them for 10-15 minutes, peel them and begin mashing them in a bowl.

  4. OPTIONAL- add butter to reduce crumbliness of the yams and increase smoothness. Note: too much butter will overpower the taste of the Ube itself.

Instructions for steak:

  1. Heat up your pan/wok and sear the steak on medium/high heat; normally 30-40 sec on each side for medium thickness steaks (adjust according to your preferred rareness)

  2. Add the marinade once you’ve flipped it over.

  3. Rest steak for 5-10 minutes
